I lurrrvvveeee cookies and these are as delicious as they sound. Super easy to make and as lovely as a summers morning these cookies are perfect for all year round.
125g Caster Sugar
100g Soft Brown Sugar
100g Soft Butter
250g Self raising flour
1 tbsp Vanilla Essence
1 Large egg
1 Cup Raspberries
1/2 Cup of White chocolate chips
Firstly, mix the sugars together into a bowl and add the eggs and butter until they make a smooth paste. Then add the flour and vanilla essence and mix together until it makes a dough.
I then chop the raspberries into small pieces and add to the mix along with the chocolate chips. For this I have used frozen raspberries as I felt like they would cook better in the cookie.
I then heat the oven to 180 degrees and line two trays with grease proof paper. I then separate the dough and roll into small balls and place evenly onto a baking tray then into the oven. I put these into the oven for about 10 minutes until they are just golden on top, but they are still soft in the middle.
I then leave to cool and once they are cool I EAT. These are delicious and I hope you enjoy them as much as me!
