Okay I am as aware as everyone else is, Easter has been and gone but that doesn’t mean we can’t still bake cute bunny biscuits right? Especially when they taste this delicious!

100g Butter
100g Caster Sugar
275g Plain flour
half teaspoon baking powder
Icing sugar
1 tsp Vanilla extract

To start, mix the flour and sugar into a bowl until well mixed together. The add the butter, making sure this is at room temperature so that this is easy to mix.

Using an electric whisk (this is cheating I know) add the butter until the mixture forms a dough and is blended together. If this does not stick into a dough then use your hands and add a splash of milk.

Once this is done, sprinkle a small amount of flour onto a work top and then apply this to a rolling pin as well and then roll the dough until about 2cm in thickness and then cut into the shape you would like your biscuits to be, this is where I went for the Easter theme and made the sweetest bunny shape. Then place onto a baking tray lined with grease proof paper and put into the oven for about 10-15 minutes at 180 degrees.

Once they are cooked and cooled you can start to make the icing. The reason I didn’t put an amount on how much icing sugar and water is I feel its best to make it by eye. The trick to good icing is lots of icing sugar and the smaller drop of water at a time. With this is is best to do it a little at a time so that it doesn’t get too watery. Then apply this to the top of the biscuits and they are ready to eat.
