Easter is just around the corner and so what better excuse to get the oven going and the baking beginning to make some amazing easter themed cakes covered in as much chocolate as possible!
110g Caster Sugar
110g Self raising flour
110g Unsalted Butter
1 tbsp Vanilla Extract
200g Icing sugar
30g Cocoa Powder
50g Milk or dark chocolate
Firstly, mix the Caster sugar and the first amount of butter together in a bowl until they are a smooth mix. Then whisk in the eggs until fully mixed in. Next using a metal spoon slowly stir in the flour until completely mixed together. Once this is done, spoon the mixture into cake cases and place in the oven for 10-15 mins at 180 degrees.
Once the cakes are done, leave on the side to cool. I find this the perfect time to start making the icing so for this you will need to get the second amount of butter and then mix with the icing sugar until it forms a smooth cream. Then place the chocolate into a bowl and melt until completely smooth. You can then add this into the butter cream and also add in the cocoa powder.
I would then place into a piping back and pipe the icing onto the cakes starting from the outside spiralling in towards the centre of the cake. Once they are all done I would then take the cream eggs and cut in half. When you are cutting them I would place each half onto a cake quite quickly because the inside starts to run out. Then Whala! You got yourself some cream egg easter cakes! ENJOY!
