When I think of classic biscuits I think of jammy dodgers and their delicious jam centre and sugar coating so what better to make, especially two weeks before valentines day, than these!

Ingredients
100g Unsalted butter
1 Large Egg
170g Caster sugar
200g Plain flour
1 tbsp Vanilla essence
Splash of water
6 tbsp of Jam

Firstly mix the butter and sugar together in a bowl using a fork or spoon. I always find it easier to mix using a spoon. Then add the flour into the bowl, a little at a time and mix together including the vanilla essence. At this stage it will either be mixing together looking like a dough, or it will be a bit like bread crumbs which if that is the case then add a splash of water and continue to mix, I used my hands to do this so that it is all stuck together.

I then sprinkle some flour onto the side and place the dough mix on top. I then roll this out until it is about 6mm in thickness. I then take a cookie cutter, I chose a heart shape so that it is perfect for Valentines day. I then cut the dough into the shapes and then take a smaller heart cutter and remove the centre of half of the biscuits. I then place these on a baking tray lined with grease proof paper. Next I place these into the oven at 180 degrees for 7 minutes. After the 7 minutes and removed from the oven and applied a small sprinkling of sugar over the biscuits then place back into the oven for a further 6 minutes, or until a light golden colour.

Once I removed from the oven, leave to cook on a wire rack until they feel luke warm. I then applied the jam to the centre of the whole biscuits and placed the biscuit with the whole in the centre on top. I then leave to cool for a further 15 minutes then EAT.
