What screams christmas more than gingerbread? This is my recipe for gingerbread biscuits for you to try this christmas.

Ingredients
350 g Plain flour
1 tsp Bicarbonate of soda
1 tsp Cinnamon
2 tsp Ground ginger
4 tbsp Golden syrup
1 Egg
125g Butter
175g Light brown sugar
Icing

Firstly mix together the flour, bicarbonate of soda, ginger and cinnamon until it looks like bread crumbs. You then add the sugar to the mix.
In a separate bowl, mix together the butter and the golden syrup and mix until it all clumps together to make a dough. Once this is mixed place onto a work top and kneed for about a minute then wrap in cling film and place into the fridge to cool for about 15 minutes.

Once this is cooled, place onto a lightly floured work top and roll out to about 5mm thick. You can then cut the cookie shapes out and place them onto a baking tray lined with grease proof paper. Place the cookie into the oven at 180 degrees and leave to cook for 13 minutes.

These will be cooked once the cookies are golden brown in colour. You can then remove these from the oven and leave to cool for 20 minutes. Once cool you can make the icing by adding the icing sugar and a splash of water together, you can then apply different colourings and decorate however you like. I have also bagged these up into little bags and then you are able to give these as a home made gift to your close friends and family!
