At work we have been having our own bake off with the theme chocolate, I think this is just an excuse to make scummy things and eat ridiculous amounts, this week was my week to provide so I decided to make these delicious salted caramel shortbread cookies and thought I would share the recipe with you.

180g Plain flour
55g Caster sugar
125g Unsalted butter

1 tin condensed milk
4 table spoon golden syrup
200g Unsalted butter

Chocolate (any sort)
Sea Salt

Firstly to make the shortbread, mix all the ingredients together in a bowl until mixed together. This is a really simple and easy type of biscuit to make and is so quick. Once the consistency of the mixture is sticking together sprinkle some flour on the work top and placate mixture onto. Then roll the mixture out into a round shape evenly throughout at about 1 cm thickness. Using a cookie cutter of whatever shape you chose, cut the cookies out and place onto a tray lined with grease proof paper. To make sure they cook evenly, using a fork, make some small holes in the top of the cut out cookie shapes.
Once you have cut the first lot out, with the left over mixture squish it back together and re-roll the mixture and complete the same again until as much of the mixture is used for cookies as possible. Then place all the cookies in the oven at 180 degrees then after 5 minutes put the temperate down to 150 degrees. Leave these into the oven for about 15 minutes or until a slight golden colour.
Once these have cooled, put all of the ingredients for the caramel into a sauce pan and bring to the boil. Once this is boiling, leave to bubble for 10 minutes. This will go a thick golden colour.

Once this is completely boiled, leave to cool for about 5 minutes while still stirring the pan so that it doesn’t go hard. Then using a tea spoon, take a small section of the mixture and place onto the cookies. You can use as much or as little as you want with this.
Once they are all covered, place into the fridge for the caramel to cool. I found that this cooled within 10 minutes. While this is in the fridge break the chocolate into pieces and put into a bowl then place in the microwave for about 2 minutes, making sure it doesn’t burn. Once this is melted get the cookies out from the fridge and put a small amount for chocolate on the top of the caramel. Once all of the chocolate is on the caramel, sprinkle the salt on the top, for this you only need a really small bit of salt as you do not want this to taste too strong. The place back int he fridge again for the chocolate to set. Once this is done they are ready to eat and enjoy!
